Flautas are flour tortillas stuffed with taco seasoned ground beef and cheese that are rolled and air fried until they are crispy and crunchy. They can be served as an appetizer at parties or gatherings of friends or for dinner. They are best served warm with salsa or sour cream to dip them in. Kids and grownups love them.

Use mini flour tortillas to make appetizer sized flautas and for dinner sized flautas use full sized tortillas. After you stuff the tortillas, roll them as tight as you can and secure them with a toothpick. Sprtiz them with a light mist of olive oil and air fryer them until they are crispy. I have air fried flautas without spritzing them with oil and they were still crispy and delicious.

I serve these beef flautas with some salsa and a yogurt salsa dip. Guacamole or queso will also work well as dips for flautas. If you serve them for dinner, toss in a few sides such as refried beans, Mexican cauliflower rice or a corn and black bean salad. Regardless of the occasion or meal, flautas are always a hit.

Ingredient Round Up

  • 93% lean ground beef
  • Onion
  • Bell pepper, I used an orange one.
  • Ground cumin
  • Coriander
  • Chili powder
  • Sweet paprika
  • Black pepper & salt
  • Mini or regular flour tortillas – I used mini tortillas.

Making the Flautas

  • Chop the onion and bell pepper. Place the onion and bell peppers on a microwave plate and microwave on high until tender. You can also sauté the onion and peppers in olive oil until tender if you wish and count the points for the olive oil. When done set aside.

  • Crumble the ground beef into a skillet. Add a small amount of water to the skillet to start the cooking process.

  • Cook the ground beef until it’s done while you stir often to keep the meat crumbled.

  • Transfer the cooked meat to a strainer over the sink to remove any excess liquid and grease. Rinse the ground beef with cold water and after it is well drained, return the meat to the skillet.
  • Add the chili powder, ground cumin, coriander, sweet paprika, black pepper, salt and water to the meat. Stir to mix in all the seasonings.

  • Add in the microwaved onion and bell pepper and mix again. As the water reduces, taste the meat and adjust the spices if necessary. Continue to simmer the meat mixture until all of the water has evaporated. Set aside.
  • Place the fat free shredded cheese and Velveeta shreds on a plate and toss to mix them together. Set aside,

  • Line an air fryer pan with aluminum foil.
  • Place a piece of parchment paper on the counter.
  • Heat mini flour tortillas, a couple at a time, in the microwave on defrost briefly to make them pliable.
  • Place a mini tortilla on the parchment paper. Place some seasoned beef on the tortilla. Top with some shredded cheese.

  • Roll the tortilla as tight as you can and secure with a toothpick. Spritz the flautas with olive oil spray and place the flautas on the air fryer pan.

  • Cook the top side in the air fryer,

  • Then remove the toothpicks and flip over to cook the other side.

  • While the flautas are air frying, place the yogurt, sour cream and salsa in a small bowl. Mix to incorporate the ingredients and then set aside.

  • Plate the flautas and serve with yogurt salsa sauce and some salsa. Refrigerate and leftover ground beef mixture.

Serving Ideas

  • Flautas made with mini flour tortillas can be served as an appetizer, snack or with sides for a meal.
  • Serve flautas with some salsa, yogurt salsa sauce or guacamole for dipping.
  • For dinner, serve multiple mini flautas with some sides such as refried beans, cauliflower rice or corn and black bean salad.

Ingredients  

Flautas

  • 20 oz 93% lean ground beef
  • ½ c chopped onion
  • ½ c chopped bell pepper - I used red.
  • tsp ground cumin
  • ½ tsp ground coriander
  • tsp chili powder
  • ¼ tsp sweet paprika
  • ¼ tsp black pepper
  • ½ tsp salt
  • 4 oz Kraft fat free shredded cheddar
  • 2 oz Velveeta shreds
  • c water
  • ¾ c water
  • 24 Mission Zero net flour tortillas, 4.5", see note at end of recipe card
  • olive oil spray

Yogurt Salsa Dip

  • 2 tbsp plain non fat yogurt
  • 1 tbsp Daisy light sour cream
  • 1 tbsp salsa, Chi Chi medium

Instructions

Flautas

  • Place the chopped onion and bell pepper on a microwave safe dish. Microwave on high for 1 min until they are tender. Alternatively, you can sauté the onion and bell pepper in 2 tsp of olive olive and count the points. I used the microwave to save the points. Set aside.
  • Crumble the ground beef into a skillet. Add about ⅓ c of water to the skillet and begin to cook over medium heat. Stir often with a wooden spoon to ensure the beef stays crumbled. Alternatively you can use a meat masher. The water will facilitate cooking until the beef starts to render fat.
  • When the crumbled beef is cooked, pour it into a colander over the skin to remove any liquid and fat. Then pour several cups of cold water over the beef to remove any excess fat that remains on the beef.
  • Add the well drained beef crumbles back to the skillet. Add the ground cumin, coriander, chili powder, sweet paprika, black pepper and salt to the meat. Mix the spices with the meat. Alternatively to using all of the spices, you can use a packet of your favorite taco seasoning.
  • Add ¾ c of water to the meat and stir. Cook over medium heat until the water has mostly cooked off. Taste the meat and adjust seasonings if necessary. Transfer the seasoned meat to a storage container. Set aside.
  • On a plate measure out the shredded fat free cheddar cheese and the Velveeta shreds. Toss to mix them together. Set aside.
  • I have an air fryer oven with shelves. I line my air fryer tray with aluminum foil. If you have an air fryer with a bucket, fry in it as you normally would.
  • Put down a piece of parchment paper on the counter to work on or you can work on a dinner plate.
  • I make 8 mini flautas at a time. I warm a few mini tortillas at a time as I need them in the microwave on 30% power for 22 sec so they are pliable.
  • Place a mini tortilla on your food scale and tare it. Add ¾ oz of seasoned beef to the tortilla in a tight strip near the bottom ¼ of the tortilla.
  • After adding the beef to the tortilla, tare the scale. Now weigh out ¼ oz of the cheese mixture onto the beef.
  • Transfer the tortilla with beef and cheese to the parchment paper. Fold the bottom ¼ of the tortilla over the beef and cheese and continue to roll the tortilla around the filling as tightly as you can without breaking the tortilla. Secure the tortilla with 2 toothpicks to keep it in place.
  • Transfer the rolled flauta to the foil lined air fryer tray. Continue to make the flautas and place them on the air fryer pan. I normally make 8 mini flauta at a time.
  • Spritz the flauta with a light mist of olive oil spray. I place the air fryer tray in the bottom position in the air fryer. Air fry at 400℉ for 6-8 min. Start checking them around the 6 min mark. You are looking for the flautas to be slightly golden and hard to the touch. I ended up air frying mine for the full 8 min. Note, I have air fried these flautas without misting them with olive oil spray and they were great.
  • When the tops of the flautas are done, remove the toothpicks and flip them over. Return the flautas to the air fryer and air fry an additional 3-4 min at 400℉ to ensure that the bottoms of the flautas are as crispy as the tops. Remove the tray from the air fryer when the flautas are done and set aside.

Yogurt Salsa Dip

  • Add the plain non fat yogurt, light sour cream and salsa to a small bowl and mix to combine all the ingredients.
  • Plate the flautas and serve with the yogurt salsa dip and some salsa.
  • There's only 2 of us so I make what I need and refrigerate the leftover seasoned beef and cheese mixture, The meat mixture freezes well too.

Notes

If you prefer, instead of using all of the specified spices, you can use a packet of your favorite taco seasoning.
I make the full 24 mini flautas for parties or when I'm entertaining a group of friends. The rest of the time, I make 8 flautas for the hubby and myself and refrigerate the leftover meat and cheese for later in the week.
If you want to make full sized flautas with your favorite low point flour tortillas, weigh out 2¼ oz of seasoned beef and ½ oz of the cheese mixture and continue on with the process. You may need to add an additional min. to the air frying times. The recipe makes 8 full size flautas.
If you are making and serving 24 mini flautas at one time, just scale up the yogurt salsa dip.
