Instructions
Flautas
Place the chopped onion and bell pepper on a microwave safe dish. Microwave on high for 1 min until they are tender. Alternatively, you can sauté the onion and bell pepper in 2 tsp of olive olive and count the points. I used the microwave to save the points. Set aside.
Crumble the ground beef into a skillet. Add about ⅓ c of water to the skillet and begin to cook over medium heat. Stir often with a wooden spoon to ensure the beef stays crumbled. Alternatively you can use a meat masher. The water will facilitate cooking until the beef starts to render fat.
When the crumbled beef is cooked, pour it into a colander over the skin to remove any liquid and fat. Then pour several cups of cold water over the beef to remove any excess fat that remains on the beef.
Add the well drained beef crumbles back to the skillet. Add the ground cumin, coriander, chili powder, sweet paprika, black pepper and salt to the meat. Mix the spices with the meat. Alternatively to using all of the spices, you can use a packet of your favorite taco seasoning.
Add ¾ c of water to the meat and stir. Cook over medium heat until the water has mostly cooked off. Taste the meat and adjust seasonings if necessary. Transfer the seasoned meat to a storage container. Set aside.
On a plate measure out the shredded fat free cheddar cheese and the Velveeta shreds. Toss to mix them together. Set aside.
I have an air fryer oven with shelves. I line my air fryer tray with aluminum foil. If you have an air fryer with a bucket, fry in it as you normally would.
Put down a piece of parchment paper on the counter to work on or you can work on a dinner plate.
I make 8 mini flautas at a time. I warm a few mini tortillas at a time as I need them in the microwave on 30% power for 22 sec so they are pliable.
Place a mini tortilla on your food scale and tare it. Add ¾ oz of seasoned beef to the tortilla in a tight strip near the bottom ¼ of the tortilla.
After adding the beef to the tortilla, tare the scale. Now weigh out ¼ oz of the cheese mixture onto the beef.
Transfer the tortilla with beef and cheese to the parchment paper. Fold the bottom ¼ of the tortilla over the beef and cheese and continue to roll the tortilla around the filling as tightly as you can without breaking the tortilla. Secure the tortilla with 2 toothpicks to keep it in place.
Transfer the rolled flauta to the foil lined air fryer tray. Continue to make the flautas and place them on the air fryer pan. I normally make 8 mini flauta at a time.
Spritz the flauta with a light mist of olive oil spray. I place the air fryer tray in the bottom position in the air fryer. Air fry at 400℉ for 6-8 min. Start checking them around the 6 min mark. You are looking for the flautas to be slightly golden and hard to the touch. I ended up air frying mine for the full 8 min. Note, I have air fried these flautas without misting them with olive oil spray and they were great.
When the tops of the flautas are done, remove the toothpicks and flip them over. Return the flautas to the air fryer and air fry an additional 3-4 min at 400℉ to ensure that the bottoms of the flautas are as crispy as the tops. Remove the tray from the air fryer when the flautas are done and set aside.
Yogurt Salsa Dip
Add the plain non fat yogurt, light sour cream and salsa to a small bowl and mix to combine all the ingredients.
Plate the flautas and serve with the yogurt salsa dip and some salsa.
There's only 2 of us so I make what I need and refrigerate the leftover seasoned beef and cheese mixture, The meat mixture freezes well too.
Notes
If you prefer, instead of using all of the specified spices, you can use a packet of your favorite taco seasoning.I make the full 24 mini flautas for parties or when I'm entertaining a group of friends. The rest of the time, I make 8 flautas for the hubby and myself and refrigerate the leftover meat and cheese for later in the week.If you want to make full sized flautas with your favorite low point flour tortillas, weigh out 2¼ oz of seasoned beef and ½ oz of the cheese mixture and continue on with the process. You may need to add an additional min. to the air frying times.
