Place the coleslaw mix, chopped onion, salt and pepper into a large mixing bowl. Toss to combine these ingredients.
Add the crushed pineapple to the coleslaw mix and toss until the crushed pineapple is uniformly distributed throughout the coleslaw mixture.
Add the dressing to the coleslaw mixture and toss until the coleslaw is evenly coated with the dressing.
Cover the coleslaw with plastic wrap and refrigerate until you are ready to serve it as a side or use it as an ingredient in another recipe.
Spoon up the coleslaw, serve and enjoy. Refrigerate leftovers.
Notes
I used a 8 oz can of crushed pineapple and I tbsp of the reserved pineapple juice. It slightly sweetens the coleslaw. If you want a sweeter coleslaw with a more prominent pineapple flavor, use more crushed pineapple and add another tbsp of reserved juice.I pair this coleslaw with pulled pork or pulled chicken and I use it as an ingredient in several of my fish taco recipes.
