Place the plain non-fat yogurt and lite cool whip into a mixing bowl and fold them together until they are uniformly mixed together.
Add the ⅓ c plus 2 tbsp of monk fruit and erythritol sweetener to the bowl and stir it into the fro yo base. Taste the fro yo base and add more sweetener if you prefer it to be sweeter.
Stir the 1½ tsp of vanilla into the fro yo base.
Add ¼ tsp of the orange extract to the fro yo base and stir it in. Take a taste. If you want a more intense orange flavor add the other ¼ tsp to the base and mix in. I used the whole ½ tsp of orange extract and I did not feel that it was overpowering but that is me.
Transfer the fro yo base into a Ninja CREAMI container and place it into the freezer for 24 hr.
If you do NOT have a Ninja CREAMI, transfer the base into a traditional ice cream maker machine and run it until done.
Take the fro yo out of the freezer and place the container into the Ninja CREAMI apparatus. Run it on the light ice cream setting twice. It will be powdery after the first run through and will be creamy after running through the cycle a second time.
Serve the fro yo and enjoy. Return the leftovers in the container to the freezer.
Notes
Using lite cool whip in this recipe bumps the pts from 0 to 1 per 1/2 c serving.You can eliminate the lite cool whip and replace it with an additional 3/4 c of plain non-fat yogurt. You may need to add a bit more sweetener as the extra yogurt will be tart. This will bring the pt to 0 per 1/2 c serving.
