Place coleslaw mix into a bowl.
Add chopped onion to bowl and toss with the cabbage.
Sprinkle the apple cider vinegar over the cabbage and onion.
Add the salt and pepper to the bowl and mix well. Taste and ad more salt if needed.
Add the light Miracle Whip to the bowl and mix well making sure the coleslaw mix is evenly coated.
Place in a container and refrigerate until ready to use.
