Ham & Cheese Omelette for Two

Ingredients  

Sweet Potato Homefries

  • 1 large sweet potato
  • tsp olive oil
  • pinch salt
  • pinch black pepper

Omelette

  • 7 egg whites
  • 2 tbsp chopped onion
  • 2 oz ham, chopped
  • 1 oz fat free shredded cheddar cheese
  • stick of butter

Instructions

Sweet Potato Homefries

  • Peel and cut sweet potato into cubes. Place on a baking tray.
  • Spritz or toss the sweet potatoes with olive oil. Sprinkle with a few shakes of salt and pepper.
  • Cook the sweet potatoes in an air fryer at 400℉ for 10 min, then flip them over and return to air fryer and ccontinue to cook for another 10-15 min until fork tender.

Omelette

  • Place the egg whites in a small bowl and beat with a fork.
  • Heat a skillet on your cooktop. When the skillet is hot, fold the paper back on the stick of butter and holding it at the end, quickly run it over the surface of the hot skillet, putting down a thin film of butter. I weighed the butter in g before using it and immediately after greasing the skillet. I used 4 g.
  • Add the egg whites to the skillet and let the eggs cook for a few minutes. When the eggs have set on the bottom, using a spatula lift the edges of the omelette and let the raw egg whites on top run under the omelette. Put a lid on the skillet and continue to cook until the eggs are completely set.
  • Spread the onion, ham and cheese on the top half of the omelette.
  • Using the spatula, fold the bottom half of the omelette over the onion, ham and cheese. Gently press down. Leave the omelette on the heat for 30 sec allowing the cheese to melt.
  • Slide the omelette out of the skillet onto a plate. Divide the omelette in half.
  • Place a half of the omelette on a plate along with half of the sweet potato homefries. Season the omelette with salt and pepper to taste.

Notes

Whole eggs can be substitute for the egg whites.
