Broccoli Salad with Cranberries & Walnuts

Ingredients  

  • 1 head broccoli that yields at least 3 c of florets
  • ¼ c chopped onion, I prefer sweet onion
  • ¼ c chopped celery
  • ¼ c Ocean Spray reduced sugar dried cranberries
  • ¼ c chopped walnuts
  • 2 tbsp light Miracle Whip
  • 3 tbsp plain non-fat yogurt

Instructions

  • Break down our head of broccoli into florets. Rince them off and pat dry.
  • Place the florets into a casserole and microwave on high for 1 min. Transfer the florets into a mixing bowl and set aside to cool off.
  • Chop the celery and onion and add them to the mixing bowl with the florets.
  • Chop the walnuts if needed and add them along with the dried cranberries to the mixing bowl.
  • In a separate small bowl make the dressing by measuring out the yogurt and Miracle Whip and mixing them together.
  • Add the dressing to the mixing bowl with the florets and other ingredients and toss until the ingredients are mixed together and all the ingredients are evenly coated with the dressing.
  • Place in the refrigerator for at least 1 hr to chill before serving. After serving, refrigerate leftovers.

Notes

The broccoli is 0 pts. All the other ingredients comes to 10 pts. You want at least 3 - 4 c of florets so when mixed with the other ingredients you get eight 1/2 c servings for 1 pt each. A smaller number of servings will bump the pt up to 2.
I used the florets from 2 medium heads of broccoli. I included a photo above in the post for reference.
