Triple berry fro-yo is delicious and a healthy alternative to ice cream. We enjoy it year round but it is particularly refreshing on a hot summer day.
In this recipe, I use plain non-fat yogurt, a frozen triple berry mix of blueberries, raspberries and blackberries, vanilla extract and some monk fruit sweetener. You can easily substitute the sweetener with one of your choice and customize the berry choices to suit your taste. The first time I made this recipe, I pureed the berries and used them straight up. Not going to lie, the seeds in the fro-yo was off-putting. Running the pureed berries through a strainer solved that problem. The end result was a smooth and creamy berry fro-yo.
I routinely made the fro-yo in a regular ice cream machine and it worked fine. I have since acquired a Ninja CREAMi machine and now use it instead. The the frozen yogurt mix needs to be run through the Ninja CREAMi twice on the light ice cream setting to produce a fro-yo that has a creamy consistency. Hope this recipe serves as a good jumping off point for you to experiment with to create other fro-yo recipes.

Ingredient Round-Up
- Plain non-fat yogurt
- Frozen triple berry mix – I use Kirkland brand from Costco.
- Monk fruit sweetener or sweetener of your choice
- Vanilla extract
Making the Fro-Yo
- Put the frozen berries in a bowl and set aside and let then thaw.

- Place the plain non-fat yogurt into a bowl and set aside.
- Using a hand immersion blender, puree the berries until they are fairly smooth.

- Place a strainer over the bowl with the yogurt. Add the pureed berries to the strainer. Use a wooden spoon or spatula and push the pureed berries through the strainer and into the bowl with the yogurt leaving the seeds and bits of skin in the strainer.

- Add the monk fruit and vanilla extract to the bowl.

- Mix all the ingredients together and pour into the Ninja CREAMi container. Put the lid on and place in the freezer for 24 hr.

- Just before serving, remove the container from the freezer and get it ready to run through the Ninja CREAMi machine.

- Run it through the ice cream machine on the full, light ice cream setting. After this first run, the fro-yo will be powdery.

- Run it through the machine again on the same settings and the fro-yo will be creamy. Serve and enjoy. Place lid back on the container and place the left overs back in the freezer.

Serving Ideas
- The triple berry fro-yo can be served for dessert plain or topped with additional berries and a dollop of Reddi-wip.
- Fro-yo is a great mid-afternoon treat.
- It can be served in a bowl or in a cone.
- You can place a scoop of fro-yo between two pizzelles or graham cracker to make a fro-yo sandwich.

Ingredients
- 3 c plain non-fat yogurt
- 1¼ c triple mix berries, Kirkland frozen berry blend, Costco
- ⅓ c monk fruit & erythritol blend sweetener
- 2 tbsp monk fruit & erythritol blend sweetener
- 1 tsp vanilla extract
Instructions
- Place the frozen berries in a bowl and set aside to thaw or defrost in the microwave.
- Measure out the yogurt and place in a bowl.
- Using a hand held immersion blender, puree the berries.
- Place a fine mesh strainer over the bowl containing the yogurt. Dump the pureed berries into the strainer. Use a wooden spoon or spatula and push the pureed berries through the strainer and into the bowl with the yogurt. When you're done you should have a strainer filled with seeds and bits of skin.
- Add the entire amount of monk fruit sweetener and vanilla extract to the bowl with the yogurt and pureed berries. Mix it all together until it is well blended. Taste the mixture. If it is not sweet enough to suit you, add more sweetener a tbsp at a time. The hubby light ours on the slightly tart side.
- Transfer the for-yo mixture into a Ninja CREAMi container, put the lid on and store in the freezer for 24 hr.
- When you are ready to serve the fro-yo, remove the container from the freezer, take the lid off and put the container inside of the Ninja CREAMi container holder and put the lid on. Put the assembly in the Ninja machine.
- Run it through the full, light ice cream setting. After the first run, if you check the fro-yo, it will most likely be powdery.
- Repeat the entire cycle above (so two 4 min cycles total). When you remove the container of fro-yo from the Ninja machine assembly, the fro-yo should be nice and creamy.
- Serve up the desired amount of fro-yo in a bowl or cone or make a fro-yo sandwich using pizzelles or graham cracker squares.
- Refreeze any leftover and use on another day.
