Fro yo is a year round staple for us. What better way to celebrate the fall season than a dish of pumpkin pie fro yo.

In this recipe, I combined plain non fat yogurt, lite cool whip, pumpkin pureé and scaled down amounts of the spice blend from my favorite pumpkin pie recipe. Monk fruit is my sweetener of choice but sugar or another sweetener can be easily substituted.

After freezing the mixture I run it through a Ninja CREAMI twice. This fro yo mixture should set up well in a traditional ice cream maker.

Ingredient Round Up

  • Plain non fat yogurt
  • Lite cool whip
  • Pumpkin – I used Libby’s.
  • Monk fruit with erythritol
  • Cinnamon
  • Ginger
  • Cloves

Making the Fro Yo

  • I was pressed for time so I mixed the fro yo right in the Ninja CREAMI container. It was doable put next I will mix it in a bowl and transfer it to the container.
  • Place the yogurt, cool whip and monk fruit in the container and mix it until blended.
  • Add the pumpkin pureé and stir it until blended.
  • Add the cinnamon, ginger and cloves and mix until blended. The light over my island isn’t the best late at night. You can see from the photo below that the pumpkin fro yo looks pretty uniform and you can see the flecks of spice in it. It is more orange in color than what it looks.

  • Put the lid on the container and freeze for 24 hr.

  • When you are ready to serve the fro yo, run it through the Ninja CREAMI on the full, light ice cream cycle twice. The first time the fro yo will have a powdery consistency.

  • After the second spin, you need to make a judgement call. The fro yo texture was drastically improved. I used a spoon to pack it down and it came together nicely and looked like frozen yogurt/ice cream. If you want an even smoother mixture, run it through the machine again. A photo of how it looked after the second spin in the machine is below.

  • Serve and enjoy. Place the leftovers back in the freezer.

Serving Ideas

  • A scoop of pumpkin pie fro can be topped with a crumbled graham cracker and a dollop of Reddi-wip and served for dessert or a mid-afternoon snack.
  • This fro yo can be placed between two graham cracker squares or pizzelles and served as a frozen dessert sandwich.

Ingredients  

  • 2 c plain non fat yogurt (0 pt)
  • ¾ c lite cool whip (6 pt)
  • c Whole Earth monkfruit with erythritol (0 pt)
  • ½ tsp cinnamon
  • ¼ tsp ground ginger
  • tsp ground cloves
  • ½ c pumpkin, Libby's (0 pt)

Instructions

  • I was pressed for time and mixed this recipe right in the Ninja CREAMI container. While it worked, I would recommend mixing the ingredients in a bowl and then transferring it to the container.
  • Place the yogurt and cool whip into a bowl and mix it together with a whisk or wooden spoon until it is uniform.
  • Add the monk fruit to the yogurt mixture and stir it until it is well incorporated.
  • Mix in the pumpkin until it is uniformly incorporated.
  • Add the cinnamon, ginger and cloves and stir until it is evenly distributed throughout the mixture. Taste the mixture. If you you think it isn't sweet enough then add a bit more sweetener.
  • Transfer the mixture to the Ninja CREAMI container, cover and place in the freezer for 24 hr.
  • If you do not have a Ninja CREAMI, then transfer the mixture into your ice cream machine and process it.
  • When you are ready to serve the fro-yo, remove the container from the freezer, take the lid off and put the container inside of the Ninja CREAMi container holder and put the lid on. Put the assembly in the Ninja machine.
  • Run it through the full, light ice cream setting. After the first run, if you check the fro-yo, it will most likely be powdery.Repeat the entire cycle above (so two 4 min cycles total). When you remove the container of fro-yo from the Ninja machine assembly, the fro-yo should be nice and creamy. You may need to make a judgement call here. After the second spin, the fro you wasn't as creamy as I expected but packing it down with a spoon before dishing it out, it was fine. If you want it creamier, then try spinning it on respin for an additional 2 min.
  • Serve the desired amount of fro yo and return the leftovers to the freezer. I normally eat a ½ c serving while the hubby eats close to 1 c.
