It has been an extremely hot and humid summer in my area. We’ve been enjoying homemade fro yo either as a snack or dessert almost daily.
I continue to experiment with flavors. I grew up back in the ’60s. During the summer orange creamsicles were the rage and one of my favorites. This fro yo recipe is my omage to creamsicles. Vanilla and a bit of orange extract resulted in a flavor very similar to the creamsicles I enjoyed as a kid. This time around, I also added lite cool whip to the plain non-fat yogurt mix. The cool whip added an extra creaminess to the fro yo but it bumps up the points from 0 to 1 per serving. If you decide to eliminate the cool whip from the recipe, replace it with an equivalent amount of yogurt and adjust the amount of sweetener if needed.
I used a Ninja CREAMI to process my fro yo but it should work fine in a traditional ice cream maker.

Ingredient Round Up
- Plain non-fat yogurt
- Lite cool whip
- Monk fruit or equivalent sweetener of your choice
- Vanilla extract
- Orange extract
Making the Fro Yo
- Place the yogurt and cool whip into a mixing bowl along with the monk fruit sweetener and stir to combine it.

- Add the vanilla and orange extract and thoroughly mix it in.

- Taste the fro yo mixture. If you think it needs it, add a touch more orange extract and I mean a touch as in a few drops. You can always add more but you can’t undo adding too much.
- Transfer the fro yo mix into a Ninja CREAMI container and place in the freezer for 24 hr.

- Just before serving, remove the container from the freezer and get it ready to run through the Ninja CREAMI machine. Run it through the CREAMI machine on the full, light ice cream setting twice.
- Serve and enjoy. Place the leftovers back into the freezer.

Equipment
- Ninja CREAMi
Ingredients
- 2¼ c plain non-fat yogurt
- ¾ c lite cool whip
- ⅓ c monk fruit plus erythritol sweetener
- 2 tbsp monk fruit plus erythritol sweetener
- 1½ tsp vanilla extract
- ½ tsp orange extract, add 1/4 tsp at a time
Instructions
- Place the plain non-fat yogurt and lite cool whip into a mixing bowl and fold them together until they are uniformly mixed together.
- Add the ⅓ c plus 2 tbsp of monk fruit and erythritol sweetener to the bowl and stir it into the fro yo base. Taste the fro yo base and add more sweetener if you prefer it to be sweeter.
- Stir the 1½ tsp of vanilla into the fro yo base.
- Add ¼ tsp of the orange extract to the fro yo base and stir it in. Take a taste. If you want a more intense orange flavor add the other ¼ tsp to the base and mix in. I used the whole ½ tsp of orange extract and I did not feel that it was overpowering but that is me.
- Transfer the fro yo base into a Ninja CREAMI container and place it into the freezer for 24 hr.
- If you do NOT have a Ninja CREAMI, transfer the base into a traditional ice cream maker machine and run it until done.
- Take the fro yo out of the freezer and place the container into the Ninja CREAMI apparatus. Run it on the light ice cream setting twice. It will be powdery after the first run through and will be creamy after running through the cycle a second time.
- Serve the fro yo and enjoy. Return the leftovers in the container to the freezer.
