Coleslaw is quick and easy to make. This lightened up version can be used as a side dish. It pairs well with summer barbecue dishes, baked fish and deli sandwiches. It is also good on pulled chicken sandwiches or fish tacos. You can also make your own version of a ‘Rachel’ sandwich by adding it to a turkey sandwich and grilling it.

Ingredient Round Up
- A package of your favorite brand of coleslaw
- Chopped onion
- Apple cider vinegar
- Salt and pepper
- Light Miracle Whip
Making the Coleslaw
- Place the coleslaw mix into a bowl. Add the chopped onions and toss to distribute the onions throughout.

- Add the apple cider vinegar, salt and pepper. Toss and taste. Add more salt and/or pepper if needed.
- Add the light Miracle Whip and mix thoroughly.

- Transfer the coleslaw to a plastic container and store in the refrigerate until it will be used.
Serving Ideas
- Serve as a side dish with grilled hotdogs, hamburgers, chicken and other grilled meats.
- It pairs well with fish and seafood such as shrimp and crab cakes.
- Fish tacos topped with some coleslaw adds a nice crunch.
- Deli sandwiches and a side of coleslaw is a winner.
- Coleslaw can be added to a deli meat sandwich and grilled to create a ‘Rachel’.
- Top a pulled chicken sandwich with coleslaw for crunch and tang.

Ingredients
- 14 oz package of coleslaw mix
- ½ c chopped onion
- 1 tbsp apple cider vinegar
- ½ tsp salt
- 2 pinches black pepper
- 6 tbsp light Miracle Whip
Instructions
- Place coleslaw mix into a bowl.
- Add chopped onion to bowl and toss with the cabbage.
- Sprinkle the apple cider vinegar over the cabbage and onion.
- Add the salt and pepper to the bowl and mix well. Taste and ad more salt if needed.
- Add the light Miracle Whip to the bowl and mix well making sure the coleslaw mix is evenly coated.
- Place in a container and refrigerate until ready to use.
