The weekends are for big breakfasts at my house. A huge ham and cheese omelette for two with a side of sweet potato home fries is one of our favorites. It’s packed with protein and keeps us filled and going for quite some time.

We’re able to run around and do our errands without worrying about lunch. Just in case our stomachs say hello, we have some fruit and a string cheese with us for a quick snack.

Ingredient Round Up

  • Egg whites or whole eggs
  • Butter
  • Chopped onion
  • Chopped ham
  • Shredded fat free cheese
  • Diced sweet potato
  • Salt and black pepper

Making the Potatoes and Omelette

  • Peel and chop a sweet potato into cubes. Spritz them with olive oil and spread them out on a baking tray. Sprinkle with salt and pepper and pop them in the air fryer. Half way through the cooking cycle, flip them over.

  • While the sweet potatoes are cooking beat the egg whites with a fork. Heat a skillet on your cook top. I like to coat the fry pan with a thin film of butter. Peel the paper back on the butter. Pick it up and quickly run it over the surface of the hot pan. I weighed the butter before using it and after greasing the pan. This method used 4 g of butter. That is 2 pt total and for 1 pt per person, it gives a good cooking result.

  • Add the egg whites to the hot fry pan.

 

  • Let the eggs set. As they solidify, use a spatula to lift the edges of the omelette and let the uncooked egg whites flow underneath the omelette. Also put a lid on the pan to aid in cooking the top of the omelette. When the egg whites are completely cooked, place the chopped onion, ham and shredded cheese on one half of the omelette.

 

  • Fold the other half of the omelette over the onions, ham and cheese. Lightly press down on the top to aid in the cheese melting. Slide the omelette onto a plate. Remove the sweet potatoes from the air fryer.

 

  • Divide the omelette and plate along with the sweet potatoes.

Serving Ideas

  • Omelettes can also be served for Sunday brunch or as a weeknight dinner.
  • You can add toast or a dinner roll and some fruit to round out the meal.
  • This omelette can be personalized by adding additional ingredients of your choice or making substitutions.

Ingredients  

Sweet Potato Homefries

  • 1 large sweet potato
  • tsp olive oil
  • pinch salt
  • pinch black pepper

Omelette

  • 7 egg whites
  • 2 tbsp chopped onion
  • 2 oz ham, chopped
  • 1 oz fat free shredded cheddar cheese
  • stick of butter

Instructions

Sweet Potato Homefries

  • Peel and cut sweet potato into cubes. Place on a baking tray.
  • Spritz or toss the sweet potatoes with olive oil. Sprinkle with a few shakes of salt and pepper.
  • Cook the sweet potatoes in an air fryer at 400℉ for 10 min, then flip them over and return to air fryer and ccontinue to cook for another 10-15 min until fork tender.

Omelette

  • Place the egg whites in a small bowl and beat with a fork.
  • Heat a skillet on your cooktop. When the skillet is hot, fold the paper back on the stick of butter and holding it at the end, quickly run it over the surface of the hot skillet, putting down a thin film of butter. I weighed the butter in g before using it and immediately after greasing the skillet. I used 4 g.
  • Add the egg whites to the skillet and let the eggs cook for a few minutes. When the eggs have set on the bottom, using a spatula lift the edges of the omelette and let the raw egg whites on top run under the omelette. Put a lid on the skillet and continue to cook until the eggs are completely set.
  • Spread the onion, ham and cheese on the top half of the omelette.
  • Using the spatula, fold the bottom half of the omelette over the onion, ham and cheese. Gently press down. Leave the omelette on the heat for 30 sec allowing the cheese to melt.
  • Slide the omelette out of the skillet onto a plate. Divide the omelette in half.
  • Place a half of the omelette on a plate along with half of the sweet potato homefries. Season the omelette with salt and pepper to taste.

Notes

Whole eggs can be substitute for the egg whites.
