These fish tacos are light and flavorful and easy to make. For this recipe,  tilapia was the star. On other occasions I’ve used Mahi-mahi or cod with great results. The tilapia was topped with several pinches of Grill Mates Mojito Lime seasoning and fresh lime slices. I’m a fan of cooking white fish in foil packets – it comes out flaky and moist every time. The fish was topped with homemade coleslaw adding a nice crunch to the taco. Serve with a side and you have a tasty dinner that’s quick to prepare on a busy weeknight.

Ingredient Round Up

  • Tilapia loins or other white fish of your choice
  • Grill Mates Mojito Lime seasoning mix
  • Fresh lime slices
  • Low carb flour tortillas. Corn tortillas also work well.
  • Homemade coleslaw (see recipe)

Making the Tacos

  • Whether they are fresh or frozen, pat the tilapia loins dry and place them on a sheet of aluminum foil.
  • Sprinkle a few pinches of Grill Mates Mojito Lime seasoning on each fish loin. The flavor is intense and doesn’t require much. Top each piece of tilapia with fresh lime slices.

  • Fold the foil over the fish, rolling it up on the three sides making a packet and cook in an air fryer or oven.

  • After the fish has cooked, tear open the foil and remove the lime slices.

  • Transfer a tilapia loin onto a tortilla, top with some coleslaw and enjoy.

Serving Ideas

  • You can serve these fish tacos with Mexican seasoned cauliflower rice.
  • They pair well with a black bean, corn and onion salad (see recipe).
  • In the summer during corn season, you can grill up some Mexican street corn to use as a side.

Ingredients  

  • 2 tilapia loins, or other white fish
  • ¼ tsp Grill Mates Mojito Lime seasing
  • 1 lime, 4 slices
  • 2 Carb Balance Mission flour tortilla, or your choice
  • ½ c homemade coleslaw

Instructions

  • Pat the tilapia loins dry and place on aluminum foil.
  • Sprinkle several pinches of the Grill Mates Mojito Lime seasoning on each tilapia loin. The seasoning is strong and you don't need a lot.
  • Place 2 slices of lime on each piece of tilapia. Fold the aluminum foil over the fish loins and seal it on all three sides.
  • Place the foil packet on a cooking tray and cook in an air fryer at 400℉ for 15 min or bake in a preheated oven, same temperature and time.
  • When the fish is done, tear open the foil packet and let the fish rest for 5 min. Remove the lime slices.
  • Transfer each piece of tilapia to a tortilla. Top the fish with coleslaw. Serve and enjoy
