Cinco de Mayo celebrates the date the Mexican army defeated the French at the Battle of Puebla during the Franco-Mexican war in1862. While this is a minor holiday in Mexico it widely celebrated in the United States to commemorate Mexican culture and heritage, especially in areas with a significant population of Mexican-Americans.
In the United States it is common to hold parades and parties to celebrate the day. For those having a party to mark the day, here are some ideas to include in your food spread.
Possible appetizers include refried bean dip and black bean pancakes. You can also serve your favorite guacamole or perhaps street corn dip.
Entrees such as chicken enchiladas, burritos, and fish tacos are crowd pleasers. You can add variety by substituting a different seafood or meat protein in any of the above entrees. Soft flour tortillas can be replaced with soft corn tortillas or crunchy ones to add variety.
